    Hints from EllaNoise!
    Would make a great newspaper column Roger. You could give out handy little homemaking hints on cooking, etc. and maybe even take letters ala Dear Abby! Great idea eh?

    I never thought about writing for a paper, I use to host a cable access Show in Cali, Where i did a couple of cooking segments. One was how to make a perfect burnt bologna sandwich, and one where I showed how to make snow ice cream...I hope some of my hints are useful, Mrs Ellanoize sez I'm full of useless trivia [img]wink.gif[/img] among other stuff... Peace

    Spicey Chickpea & Butterbean Pasta

    Ingredients:

    1 package of your favorite pasta
    2 cans of chickpeas, drained and rinsed
    2 cans of butterbeans including liquid
    1 can of vegetable stock (or 14 1/2 oz)
    3 large chili peppers or
    1 - 2 jalepanos
    tobasco sauce

    Directions:

    Make pasta as usual. Meanwhile, heat a dutch oven over med. heat. Add a little veg stock. Chop chilis into large chunks and saute in stock (include the seeds) for about 2 minutes. Add chickpeas and more veg stock and cook for 5-10 mins. Add the butterbeans with liquid and the rest of the veg stock. Let simmer. Adding some chopped pork should be perfectly okay!
    If chilis are not hot enough, puree in blender or chopper 1 or 2 jalepanos and add. Then add tobasco to taste.

    I'm no cook but if this had turned out right
    I think it would have been quite good.
    I do love butterbeans ordinarily!

    It's time for nice holiday recipe for anyone thinking of making a ham. It's easy and amzaing.
    It's southern Baked Ham. (Not bad for a yankee like me).

    1 smoked ham 4 to 6 lbs will serve at least 6-8.
    1/2 cup granulated sugar
    1/2 cup dark brown sugar (packed loosely)
    1/2 cup prepared mustard ( I use guldens spicy brown).
    4 ounces honey
    1 small jar of saucey susan.
    apple juice

    Blend the 2 sugars and set tem aside.
    Blend the honey, mustard and suacy susan and set aside.

    Pour apple juice in baking pan cover the bottom.
    place ham flat side down in the pan.
    Baste the ham with the honey/mustard combo.
    then coat heavily with sugar mixture.
    bake slowly at 325 degrees for 18-20 minutes per pound uncovered until the sugar looks nice and golden brown.It will have a nice crust. 2 hours if it's a 6 pounder.
    Feel free to baste it etc but it will cook just fine unattended. It will be moist and juicy beyond belief.
    I have also made this in clay roaster. That's great as well if you use one you don't need the apple juice. The juice helps with sweetness and it will keep it from burning on the bottom in a conventional pan.

    Cooking is a tempting craft
    And gazing down the oven's shaft
    I start to wonder if I can
    Create a dinner in a pan.

    The cooking magic I will work!
    No more I'll be a takeout D-O-R-K!
    I'll prove the world what I can be!
    I'll make a meal for you and me.

    Into the kitchen with brave strides
    I walk like wolf, who danger bides.
    And looking back to high school days
    I recollect my mother's ways.

    Spaghetti? Oh, that sounds good!
    I grab the package where I stood.
    Potatoes I shall add to that.
    They'll make it better, so I bet.

    My mother always said to add
    the veggies, but they make me mad.
    To top it off I think I'll put
    some oil in (I heard I should)

    I say a prayer, turn the knob,
    And a blue flame begins to sob.
    It's magic, that's why it's so blue.
    It makes my tasty dinner stew.

    It starts to boil soon enough,
    And bubbles make the oil rough.
    And lo-'n-behold it starts to burn
    Just when it knows my back is turned.

    I quickly knew something was wrong
    When my stew's smell became too strong.
    But no fear, my dear friends,
    God blessed me with intelligence.

    All fires are quenched by water thrown,
    That's one sure thing I've always known.
    So thinking quick I pour some in
    And see a frightening thing begin.

    A fiery face came to my eyes,
    It must be Satan in disguise!
    It grabbed the stove in fire's grasp!
    Behind I heard a frightened gasp.

    What happened next I won't describe,
    Threaten death, or give a bribe,
    Or loose a lion in my den.
    But never shall I cook again!!!
