I have the latest issue of Amazing Figure Modeler too, it rocks! Anyone who's an alien or pred fan should try and track down a copy.
My favorite way of rendering stone is to use chunks of closed cell styrofoam (like the kind televisions etc. come packed in), and then give it a few coats of Woodland Scenics foam putty (thinned with water), and then sand it down to give it a weathered look. I used this technique for the concrete base for my horizon bane kit-
You can get woodland scenics stuff at most hobby stores that sell model train supplies.
To recreate steps like Steve did with that diorama, you could just glue together a bunch of chunks of foam and cover the whole thing in foam putty. You could even cover the foam with sheets of super sculpey or epoxy clay and then sculpt the stone texture by rolling a ball of tinfoil over the clay.
