    These are the pots that are coming with my 90c. What are they for- especially the shallow ones? What's the thin one with all the holes for?

    Loxie,

    It looks like you have two large thermowell pots, the shallow pots with the handles are used to put inside the large pots so you can cook more than one thing at a time. The cover with the proceline is the thermowell cover. It's hard to tell what the other shallow pots are for by that picture. Maybe someone else on this board will know. It looks like you have some extra covers too.

    You have:

    (2) Large Thermowell Kettles. I suggest you keep these.
    (4) Large Thermowell Kettle Lids. I suggest you find the nicest three and keep them, or keep all four. Check to see if any of these lids have little clips underneath - these are for holding the Double Boiler, which you don't seem to have.
    (2, or perhaps more) of the Large Thermowell Kettle Inserts. These are used for cooking various items above other items, as perviously mentioned. They should all have handles. I suggest you keep at least two of these.
    (1) Thermowell Lid (covers the hole in the cooktop). KEEP IT!
    (2) Knobs - possible timer knobs, or, perhaps Oven Temperature knobs. Hard to tell from this picture.
    (2) Unkown.

    In order to make full use of your new 90C and these items, you need:

    (1) [b][i]C-series Service Manual, Revised Edition.[/i][/b] This tells you how to setup and keep your CHAMBERS running properly.
    (1) [b][i]"Idle Hour" Cookbook, Third Edition.[/b][/i] More than a mere cookbook, it actually doubles as an Operation Manual as well.

    Todd, can you tell what the measuremenst of the kettle inserts are (with and without the lip)? I believe I've got one but, there are no markings on it.

    Loxie, the plate with holes in it could be a Wear-Ever steamer plate (SP). It would sit at the top of one of those pots or insert pans. Steam from the water below steams the veggies placed on it.

    Or, it could be one of the Wear-Ever plates that custard or egg cups sit into - same concept, the boiler water below cooks the food. Probably need to see a close-up pic to be sure.
