FT, since we can only release rookies with 1 year left on their contract, could you please ask Scott to reset them all to 0?

Technically you CAN release any player on your roster. However, since you agreed to abide by the rules, you MAY only release players with 0-year contracts, players currently on your team, and rookies taken in the draft.
So, go knock yourself out.
Of course, since the game doesn't know any better, you can't cut players that leave you without sufficient depth, so you'll have to wait until you get your drafted players to cut them.

So we are permitted to release palyers we inherited, correct? That's good to know. Actually, I think I inherited a few pretty good players.

yes anyone on your roster right now that you didnt pick up on your own but instead was sitting their waiting for you to sign up is allowed to be released until GAME 1
after GAME 1 starts you keep what you got unless its on a 0 year contract

Is it possible for all players to be reset to 0 year contracts anyway? This would allow us to negotiate with the current players we have on our rosters, which I think we should be able to do.

Yeah, I'd like to be able to do that, too. It would help me for next season's negotiations also.
