    If you are like me and have a ton of zucchini in
    the summer........try this it is really good!

    Mock Crab Cakes
    2 cups coarsely grated zucchini, unpeeled (about 1 medium)
    1 onion, finely chopped (grate it also)
    1 cup Italian bread crumbs
    1 tablespoon mayonnaise
    1 tablespoon Old Bay seasoning
    1 egg, beaten

    Combine all ingredients in a small bowl (grate the zucchini and onion into a colander so some of the liquid could drain out). The texture can be adjusted -- if it's too dry, add another egg; if too wet, add more bread crumbs (i had to add a couple extra tablespoons of crumbs).

    Heat some oil in a skillet. Form mixture into patties and fry over medium heat until golden brown on both sides, about 2 to 3 minutes per side. Makes 4 big or 6 medium cakes.

    on the weekend my kids were out for the whole day so i decided to try something new and easy to make

    4 cups sliced raw potatoes
    1 teaspoon salt
    1/8 teaspoon pepper
    2 tablespoons flour
    2 tablespoons finely chopped onion
    8 ounces shredded sharp Cheddar cheese
    2 tablespoons butter
    2 cups milk

    Place half the potatoes in a greased baking dish. Sprinkle with half the salt, pepper, flour, onion, and cheese. Dot with bits of butter. Repeat layer then add milk to cover potatoes. Cover with foil or lid and bake at 350? for 30 to 40 minutes, or until tender. Take the lid off near the end of cooking to brown, or put under broiler for a few minutes.
    Serves 4 to 6.

    <font color="yellow">I would highly recommend Mrs Gator's Meatball recipe.</font>
    It was so simple and ez to make and were really delish.

    1 lb ground beef
    1 egg
    1/2 cp Italian bread crumbs
    Italian seasoning to taste (I use 1/2 tsp)

    Mix altogether and make whatever size meatballs
    you like. Bake in 350 degree oven. Depending on
    the size, this may take 15-30.

    For the chocolate lovers out there *G*

    Neiman-Marcus Cookies
    2 cups butter
    4 cups flour
    2 tsp. soda
    2 cups sugar
    5 cups oatmeal (blended)
    24 oz. chocolate chips
    2 cups brown sugar
    1 tsp. salt
    1 8 oz. Hershey bar (grated)
    4 eggs
    2 tsp baking powder
    3 cups chopped nuts (your choice)
    2 tsp. vanilla
    Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.

    me too Twi! and the recipe makes so much, I
    usually freeze half of the dough to bake later!
    These sure satisfy a chocolate craving! *L*

    Last night, Julie made a bananna puddig, It is quick & EZ.

    Layer Vanilla wafers in a baking dish, folowed by a layer of sliced banannas, repeat until you are nearly to top of dish.
    Make and pour over a box of bananna pudding, let sit until pudding is cool.

    Mrs G i use chopped walnuts in the Cookies and OMG ........i need to go to the grocery store now im wanting some *LOL*.....and it does make lots of cookies...i omit the oatmeal.im gonna try it with oatmeal next time *drools*
