    RA , Do you have a recipe for Carmelized Onions ? I have checked all my cookbooks and I cannnot find it.

    Apple Turnovers

    Pastry Dough
    2 cups flour
    1 teaspoon salt
    ? cup butter or margarine, plus 3 tablespoons divided into 6 parts to flavor filling
    1/3 cup ice water

    Apple Filling
    3 cups (about 1 pound) apples, peeled, cored, and sliced or chopped
    2/3 cup sugar
    2 teaspoons cinnamon
    ? teaspoon nutmeg
    1 tablespoon minute tapioca

    Preheat oven to 400 F.

    In a medium bowl, combine flour and salt. Work butter into flour until mixture has the consistency of meal. Add enough ice water (about 1/3 cup) to form a dough that barely sticks together. Knead on a lightly floured surface 4 or 5 times. Roll dough about ? inch thick and cut into 6" circles. (Use a small plate as a guide.) Cover with a clean kitchen towel while making filling.

    Combine sliced apples, sugar, cinnamon, nutmeg, and tapioca in a medium bowl and stir until blended.

    Spoon 3 to 4 tablespoons of apple filling onto each circle of dough and add a pat of butter. Moisten the edges of the pastry with water and fold circle in half over the filling. Press edges together to seal and crimp. Score top of each turnover to let steam escape while baking. Place onto baking sheet.

    Bake at 400 for 15 minutes, then reduce heat to 350 and bake about 30 more minutes, until tops are golden.

    Optional: top with powdered sugar glaze after baking.

    1 cup powdered sugar
    1 tablespoon milk
    drop of vanilla extract

    Blend sugar, milk, and vanilla until smooth. Drizzle over turnovers once they have cooled a bit. [img]graemlins/dish.gif[/img]

    Easy Apple Salad

    6 unpeeled apples
    1 can crushed pineapple, drained
    1 lg. container Cool Whip
    2 T. sugar
    1/2 c. nuts

    Dice apples. Add rest of ingredients, mixing well. Top with chopped nuts.

    yayyyyy, fall is here, almost time for Thanksgiving!!!! here is the recipe i promised, chloe, for the double layer pumpkin pie... [img]wink.gif[/img]


    Double Layer Pumpkin Pie

    INGREDIENTS:
    4 ounces cream cheese,
    softened
    1 tablespoon milk
    1 tablespoon white sugar
    1 1/2 cups frozen whipped
    topping, thawed
    1 (9 inch) prepared graham
    cracker crust 1 cup cold milk
    2 (3.5 ounce) packages instant
    vanilla pudding mix
    1 (15 ounce) can solid pack
    pumpkin puree
    1 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/4 teaspoon ground cloves

    DIRECTIONS:
    1. In a large bowl, whisk together cream cheese, 1 tablespoon of milk, and sugar until smooth. Gently stir in whipped topping. Spread into bottom of crust.
    2. Pour 1 cup of milk into large bowl, and thoroughly mix in pudding mix, pumpkin, cinnamon, ginger, and cloves. When thickened, spread over cream cheese layer.
    3. Refrigerate 4 hours, or until set.

    here is another i found while i was looking for that one, lol.... it doesn't sound bad... if you happen to like pumpkin (i do) and cheesecake (i DO!! lol)....

    Low Calorie Pumpkin Cheesecake

    Ingredients:

    Crust
    1 cup plus 2 tablespoons graham cracker crumbs
    3 tablespoons apple jelly

    Filling
    4 (8-oz.) pkg. fat-free cream cheese, softened
    1 cup firmly packed brown sugar
    2/3 cup sugar
    5 eggs
    1/4 cup all-purpose flour
    2 to 3 teaspoons pumpkin pie spice
    2 tablespoons brandy, if desired
    1 (15-oz.) can pumpkin
    1 cup frozen fat-free whipped topping, if desired
    Nutmeg, if desired

    Directions:
    . Heat oven to 350?F. Spray 9-inch springform pan with nonstick cooking spray. Coat sides only with 2 tablespoons of the graham cracker crumbs. In medium bowl, combine remaining 1 cup graham cracker crumbs and apple jelly; mix well. Press in bottom of coated pan.
    2 . Bake at 350?F. for 8 to 10 minutes or until set. Cool 5 minutes. Refrigerate 5 minutes or until completely cooled.
    3 . Meanwhile, in large bowl, beat cream cheese at medium speed until smooth and creamy. Gradually beat in brown sugar and sugar until smooth. At low speed, add eggs 1 at a time, beating just until blended.
    4 . Meanwhile, in small bowl, combine flour, pumpkin pie spice, brandy and pumpkin; mix well. Gradually add to cream cheese mixture; beat until smooth. Pour over partially baked crust.
    5 . Bake at 350?F. for 1 hour 20 minutes to 1 hour 30 minutes or until center is set. Turn oven off; open oven door at least 4 inches. Let cheesecake sit in oven for 30 minutes. With sharp knife, loosen cheesecake from sides of pan. Cool in pan on wire rack for 2 hours or until completely cooled. Refrigerate at least 8 hours or overnight.
    6 . To serve, carefully remove sides of pan. Cut cheesecake into wedges. Top each wedge with 1 tablespoon whipped topping; lightly sprinkle with nutmeg. Store in refrigerator.


    High Altitude (3500-6500 ft) Increase flour in filling to 1/4 cup plus 1 tablespoon. Bake at 350?F. for 1 hour 15 minutes to 1 hour 25 minutes.

    Garlic Oil

    1 head garlic
    About 3 cups olive oil

    Separte garlic into cloves and peel. Place into a jar or bottle. For a decorative effect , thread garlic cloves on a bamboo skewer. Fill with oil and tightly seal. Let stand overnight before using , then store in refrigerator. Use for dressings , marninades and sautes. Makes three cups.

    15-Minute Dinner Nachos Supreme

    1 lb. ground beef
    1 pkg. Taco Seasoning Mix
    1 can Condensed Tomato Soup
    1 1/2 cups water
    1 1/2 cups uncooked instant white rice
    Salsa
    Shredded Cheddar cheese
    Shredded lettuce
    Tortilla chips

    Cook beef and taco seasoning in skillet until browned. Pour off fat.

    Add soup, water and rice. Heat to a boil. Cover and cook over low heat 5 min. or until done.

    Top with salsa, cheese and lettuce. Serve with tortilla chips for dipping. Serves: 4 [img]graemlins/dish.gif[/img]

    HALLOWEEN SPIDERS

    1 (12 oz.) pkg. chocolate chips
    1 med. can of chow mein noodles (may not need all of them)
    1 pkg. M & M candy

    Melt chocolate in microwave. Stir in noodles. Drop by spoonsful onto waxed paper. Add 2 M & M's for spider eyes. NOTE: Add 2 to 4 tablespoons water, if needed, to thin chocolate. [img]graemlins/dish.gif[/img]

    HALLOWEEN FACE PAINT

    1 tsp. cornstarch
    1/2 tsp. water
    1/2 tsp. cold cream
    2 drops food coloring

    In a small mixing bowl, combine all ingredients, mix well.


    --------------------------------------------------------------------------------

    GREASE PAINT (FOR HALLOWEEN)

    2 tsp. white shortening
    5 tsp. cornstarch
    1 tsp. white flour
    2 or 3 drops glycerin
    Food coloring or cocoa for brown

    Mix in given order.
