hey peeps! let's share! if you have a recipe that is too good to keep to yourself, or really unique, post it here. it can be anything from your favorite dinner or dessert to a drink recipe.
my recipe is called rappie pie. (pronounced raw-pea). this is sort of a unique recipe because as far as i know it is not made anywhere in the world except south western Nova Scotia, which is where i grew up. if i'm wrong on this please let me know! it's an old acadian dish. i now live in alberta and no one here has ever heard of it except for my husband's uncle who also grew up in Nova Scotia. first you put a whole large chicken in a large pot of water. do not use just enough water to cover. you will need a LOT of water. season the water with chopped onions or onion powder, garlic or garlic powder, lots of salt, and some pepper. boil this for several hours until the chicken is very tender and the broth is very tasty. add more water as needed. remove chicken from broth and let cool. save broth for later. while the chicken is cooking, peel and grate VERY FINELY 10 - 20 pounds of potatoes depending on how many people you want to feed. 5 pounds will do for a family but this dish is usually made to feed large groups. once the potatoes are grated they will look like a very watery mush. don't worry if they turn a brownish color. it's just the starch. now put the potatoes (small amounts at a time) into a clean pillow case. i boil the pillow case first to sterilize. now squeeze ALL of the water out of the potatoes. you will have to squeeze hard. you will be left with lumps of potatoe that feel a bit like clay. continue until all of the potatoes are squeezed. now take the broth from the chicken and replace the moisture in the potatoes with it. you will need to add a lot of broth. the potatoes should be very runny when you're done. if they are not runny they will be very gluey when cooked. now take 2 - 4 greased 9x13 pans (depending on how many potatoes you used) and pour a layer of potatoe mixture in each. reserve 1/2 of the potatoe mixture. now place a thick layer of chicken over the potatoes in the pans. then cover the chicken with the rest of the potatoe mixture. next put a layer of raw bacon strips over the top layer of potatoe. place in the oven and bake at 350 degrees until bacon is cooked and there is a "crust" on the top of the potatoes. remove from the oven and cut into large pieces. top with butter, salt and pepper to taste. enjoy!
oh! and a warning!! the grating is hard on the knuckles!! *L*
also.... make sure you grate the potatoes very finely. don't use a cheese grater. a juicer also works.
