I've heard the word kosher used in several ways in my lifetime,, for instance, Is everything kosher?? or "Things aren't kosher?"... I always understood it to mean OK.... but how did this begin???

Kosher (yiddish) = jewish law regarding being "fit" for consumption, proper, ok.
Folks just picked up on that and started using it in other applications. (Kind of like how kids started using words like "cool" or "sweet" in regular conversation, not in their literal definitions.)
Kosher is derived from the jewish religion. Certain foods (especially that from certain animals) are thought to be non-kosher. Other things have to be prepared in a certain way and blessed to be kosher (fit to eat).

Theres also different levels of Kosher as well as far as Jewish food preperations go.
