What styles mostly run through the studio?
Why don't you just play with somoe "minus drum" tracks and a lil groove solo.

I'm not sure exactly what the demo is for. Is it for the studio to demo the quality of the drum sounds they can get, or is it to showcase your skills and taste as a session drummer for hire? In either case, I too would recommend playing a variety of grooves. You might want to play short 4 bar repeating grooves with the very occasional simple fill inserted, in a variety of styles. Rock, ballad, Hip hop, funk, jazz and Latin depending on what you do well. Don't be afraid to use a rimclick, tambourine or shaker either. Change snare drums to suit the style too. Because even if the demo is for the studio to show off their acoustic drum sounds, the people who will be hearing it may also be looking for a drummer. Keep it simple, varied in style, but always groove.
