What you listed would definitely be the main things. Also, I think the year the figure/toy was released would be nice.
Some other things that don't really interest me, but might others, would be, original retail price, and secondary market value.

But seriously, something like a status (like rumored, un-obtained, obtained, etc), desc/code of variation, quantity (or would you just have duplicate records?)and condition (MIP, open,etc).

Something that just popped into my head is waht if I set up the GUI to have 5 or so custom fields with numbers and another 5 or so with check boxes.
That way, if it is something that you want to track, then you can name the field that way.
e.g. name a number/text field to read "orig rel" and enter the date, another one "qty" and put in the numbers you want. And then have the check boxes set up to read "rumor", "have", "Want", "chase", etc and include a description field for the figure

Check out www.battleplanner.com. I use it to organize my HeroClix and Mage Knight, but the same format could work for most other things, with some tweaking. There is a professional version that you can purchase and when you make updates to it, the programmers will update the main data file and then everyone else can download those updates. Works quite nicely.
