One theory is that they see in some sort of special vision, perhaps infrared, and that enables them to see our warm bodies. It may also be another explanation (the other being the noise coming from the hammering and various commotion) as to why they seemed to flock to the farmhouse in both versions of Night because the house would be literally radiating heat.
Given the comedic circumstances of Shawn, I don't know if that scene could be counted as canon. I believe it is something that Romero should've explored somewhere in his films... or at least subtely touched upon. Perhaps during one of Logan's studies in the immensely informational Day of the Dead.
