I appreciate they don't really have a food culture here, but things have changed dramatically in the past 10 years.
I am actually member of the Slow Food ireland movement and through them I got my hands on stuff that is done the way it was supposed to (i.e. no additives, conservatives ... no crap in brief) like Black Pudding from Sneem in Kerry or white butter from Kilkenny or the famous brown cows feom Kilkenny again (you can milk them and eat them !), any cheese from County Tipperary ...
There are some outstanding Irish chefs around who really know what they are doing. Of course the background of this country ain't rich like france or italy for example but they are putting a huge effort to get to that level.
